tomato soup

 This creamy tomato soup is simple, delicious and pairs perfectly with grilled cheese. The full recipie can be found below.

 

ingredients:

- medium white onion
-6 tablespoons of unsalted butter
-858 ml of diced tomatoes
-1.36 L of tomato juice
-4 tablespoons of sugar
-3 chicken buillion cubes
-salt and pepper to taste
-1.5 cups of heavy cream or whipping cream
-1/4 cup chopped basil
-1/4 cup chopped parsley
-1 cup red wine


Directions:

step 1: Melt butter in a large pot.
step 2: Finely dice onion and add to the pot with the melted butter and cook until translucent.
step3: Add tomato juice and diced tomatoes to the pot and stir to combine.


step4: Add in your sugar. The sugar is to combat the acidity, it is important to note that some tomatoes are more acidic meaning you may need more or less sugar. I reccomend adding the sugar in slowly (you can always add more but you can't take back what you've already added) and tasting in between to see if more is needed. 
step5: Add in your chicken buillion cubes
step 6: Add salt and pepper, stir to combine. Heat to a boil then turn off the heat.
step7: Add in your wine, cream, parsley, basil and stir to combine.
step 8: Serve warm.
